Antioxidant capacity measurement developed by the National Institutes on Aging at the National Institutes of Health (NIH).
Antioxidant
Molecules found in our bodies and food that inhibit cell damage and death by caused by free radicals and oxidation by giving electrons to the free radicals’ unpaired electrons, disabling their unruly behavior.
Oxidation
Occurs naturally 24 hours a day throughout your body as your cells, tissues, and organ systems work together to conduct routine biological processes.
Free radicals
As cool as they sound, free radicals are a dangerous byproduct of the natural oxidation process, causing chain reactions in the body that damage cells.
Helpful Superfood Hints
1) Skip the pesticides: Whenever possible, choose organic, local produce.
2) Snack raw: Raw fruits and veggies generally retain more of their nutrients. Tomatoes are an exception, as cooking increases their cancer-fighting antioxidant lycopene.
